Can someone describe the difference between these models?

Straightforward: the 'Sirrus' line has 2x drivetrain (i.e. double crankset), and is slightly more 'road' oriented. 'Sirrus X' bikes have 1x drivetrains, and typically come stock with slightly wider, more 'gravelly' tires.

There are lots of detail differences other than that, both within and between the two 'Sirrus' lines, but those are the two essential ones.
