Chain wrap/ Ultegra RD 6600 question
I have an older long-cage Ultegra RD-6600 I want to use on a parts bin beater bike I am building. I have two cassettes I can use, the one I prefer is the 11-36t Deore 10 speed. I'll be using a 34 or 39t chainring, single up front.
Shimano literature says the max cog is 27 with a max total cap of 37. I know they err on the cautious side, but can I run a 36t max cog on a 1x setup? I don't know what total capacity is, is that chain wrap? If so, what does that mean and how do I calculate?

I also own an Ultegra 12-27t cassette I can run, I have actually used this cassette with this derailleur and it works well. Just looking to squeeze out a little extra range if I can.
Edit - the small shifts in the Ultegra cassette make it a joy to ride on the road so no worries if my big cassette won't work ;-)

I don't think you have prayer of the 36T cassette working with the 6600 RD. As you say, that is 9 teeth over the max cog. Chain wrap does not factor in this.

+1 Max cog and chain wrap are totally separate specifications; staying within one does not allow you to grossly violate the other.

That pic does not show the chain on the 36 cog, don't get too excited
Edit- I see a pic in another thread where he has a similar 105 with the chain on the big cog so apparently it is possible!

And while I do not have the chain on the 36 it does work well. I used the Big Big +2 for chain length.
I also have run this with 3 105 GS Rear Derailleurs. I have GS derailleurs on 2 Centurion Pro-Tours(5700) and a Fuji Stratos(6700) running a 11x36 cassette and a 105 5500 on a 12x36 9 speed.

It all comes down to the hanger on the bike. The Wolf Tooth Road Link works by merely dropping derailleur down to accommodate the larger cog.
If you frame was designed for larger cogs, like a touring bike, with a hanger that already positions the derailleur lower, you have a better chance. If your frame was designed to optimize a narrow range cassette, it may not work so well.
