Is it possible to get Shimano groups under Ultegra? I've got an old steelie I'd like to redo, but when I've looked, no less expensive groups. I'd be using it as a commuter, so I don't want to drop over a grand on parts.
Of course, I just got a job at a bike shop, so maybe if I can save some $$$ by using an employee discount. (Summer job for a teacher. Looking forward to learning...)

Of course... 105 is the next step down, then Tiagra. It's hard to find groups in some of the internet outlets, simply because most people are usually taking their 105 bikes up to Ultegra. Either use your employee discount (what I would do), or piece it together off eBay. You can probably find 10 speed 105 for something in the neighborhood of $500..look at gvhbikes.com kit builder for an example. I think you'll find it shifts beautifully when set up correctly. You're not really losing much compared to the pricer groups.

Those are Cinelli Campione Del Mondo and they work great with brifters , no cable groove though.

I have a Giant OCR C3 which is a carbon frame/105 bike. I'm pretty satisfied. I'm not going to race it, but I like the STI-type shifters, and the old bike needs a new wheel set anyway. I'm trying to figure out how to do this upgrade, possibly in stages. If I were to keep the DT shifters and upgrade the wheels to 8-10sp compatible, would I need any other parts besides a chain? Would that work with the old standard double from 1986? thanks.
Get a new 8-10spd wheelset with a compatible cassette. Buy a chain that fits that cassette and go with it. You may find that the 10 spd chain can drop between your two crankset rings. You can run the derailleurs on friction mode for any number of speeds.

Shimangnolo triple. Rare Centaur flatbar 10 shifters on titanium bars and an ultra rare FSA Orbit 1" Headset. Hand built, tied and soldered wheelset (rear is tied/soldered for now. Fronts on another build for the moment).
Lugged stem! Dia Compe 986's! Solid sterling silver details! Ancient saddle! Record 10 rear hub and Centaur 10 drive! Wild cable hangers!

1980's South African built Reynolds 501SL Zini with 2006 Campagnolo Veloce 10sp groupset
Still need to trim a few things down and tune it, but its essentially finished.

The quill pedals will go when I get a set of Look's to replace them. That way I can standardise the fleet and use one pair of shoes with whichever bike I want.
Bars are no-name randonneur type bars, with a slight upward curve from the centre at the stem. Just a simple set of steel bars my LBS had laying around. Havent ridden them for more than a few km yet, but they seem to fit nicely.
