Bike trails near LA / OC

Bike trails near LA / OC
Hi everyone,
Are there some bike trails that are more challenging then beach trails or city commuting near LA/OC (Santa Monica, LA, Torrance, Norwalk, Fullerton, Cerritos, Long Beach, and near cities)
I usually bike on beach bike trails (venice/santa monica/long beach/etc) or to commute to any starbucks/cafes that are 10-15miles away (im one of those annoying freelancers, who works at a cafe not at home)
it’s still challenging but mainly bc of safety issues not challenging enough physically. (People looking to their right not left and jumping into street/traffic or jaywalking, or angry drivers)
I want to try hills and all sorts of things.. the strava segment doesnt look accurate or doesnt show the whole trail..
anything would help..!

Try the loop through New Port , Irvine , Laguna Canyon and back onto PCH to get back to start point .

oh Elvo...ach (and ca hwy 39 not exactly a bike path) is currently closed between red box and the big tujunga turnoff/intersection.
