Road wheels have Ultra Sport 2 in 700-32. Lots of miles, no flats and surprisingly little wear.

26er wheelset 1 for dry/road has Compass (René Herse) RTP 559-58 front and
Continental Contact Speed 26x2.0 rear.

26er wheelset 2 for winter and wet has Race King Protection 26x2.25.

I use 28c slick Gravel Kings at about 85psi. I’d go 32c if my frame could fit them. On my third ride a little 2mm rock chip punctured my tire and tube. I patched the tire and replaced the tube and haven’t had an issue in another 500 miles. I’m going with GP5000 in the future.

Just switched to 28 Gatorskins. Love the ride quality but I am coming from 23s so that is part of it to.

I'm glad Gatorskins are popular as I will probably buy them again when they wear out.

Continental Grand Prix (hand made in Germany) 700 x 25. Very similar ride to GP4000SII.

Panaracer Pasela 700 x 28 on the Gitane, and soon once more on the Mercian, running around 90 psi each; Continental Cyclocross 35 mm on the Raleigh Competition at around 60 psi and that takes care of the fixed/ss end of things.

700 x 28 Continental Sport tires on the Mercian Colorado, the last of a stash of them I started riding in 2003, around 90 psi

27 x 1 1/4, aka 630 x32, on multiple bikes, and the clear winner in that size is the Panaracer Pasela. 70 psi because these bikes mostly have straight-walled rims without bead hooks, and you know what? Those old English guys were right, 27 x 1 1/4 at 70 psi is a pretty awesome ride.

Bontrager R1 700x32. Came with the bike and they seem okay. Haven't ridden anything else so I don't have anything to compare them to.
