SIDI Heal Replacement Problem
So I picked up a pair of SIDI shoes cheap. They're used. The reason they're so cheap, the heals are worn out. I tried to unscrew the Phillips head screw, but it's been worn down some and I can't get a good purchase with any of my Phillips head screw drivers. I know I can't be the only one who's had this issue. So how has anyone gone about getting that screw removed so they can get the old heal off to replace it?

Use an EZ-out. It's kind of like a reverse threaded tap. Costs about $8 for a cheap set of them which will be fine for what you need, and takes two seconds to use.

Or if you don't have a saw, maybe you can cut/break off the remaining piece of heel protector and get the screw out by using pliers or a vice grips to turn it.

Dremel a slot. The end result will be the same as a hacksaw - just less chance of slotting the carbon/plastic sole from an oversized tool.

Looks to me like the screw head is packed with dirt. Take something sharp and pointy and scrape all that crap out. Then try a #1, #2, and #3 phillips head to see which gives you the best purchase after you've gotten all the crap out of there.

I've had this problem regularly. To date, I've had success taking a knife to the remainder of the heel around the screw and slowly cutting it away from the screw head. That's the solution suggested by indyfabz above (#4). It's quite an effort but once enough has been removed I can get a grip on the screw head with some pliers. A small turn to unfreeze the screw is usually enough that a screwdriver can then be used.

That's what I do. And the one or two times it didn't work, I brought it to my LBS and they were able to do it successfully in less than 30 seconds.

For the first try pick out all the dirt, then place the screwdriver and give it a whack with a hammer. It will seat better and loosen the screw. On cleats save the worst for last and then rotate the whole cleat. Use a fresh bit not some old worn out screwdriver.
