They might fit as these racks are actually run pretty wide inside. Height might be a bigger issue. At worst you might have to build a small spacer piece on the bottom rack eyelet to raise it up an inch or so.
I personally used a 2.4" x 29" mountain bike tire on a 23 mm rim on a Tubus Cargo with tons of room to spare.
Tubus now makes a fat bike rack that should most definitely fit your bike. 26" fat bike tires are the same diameter as 29"+ tires. The rack is designed for wider spaced hubs however.

Although clearance recommendations are usually pretty conservative from manufacturers, your 75 mm tires are a lot larger than what is recommended. None of the Tubus racks are height-adjustable, but the Logo and Vega racks have a wider tire recommendation (60 mm) than the Cargo.

It can be adjusted for height, so it will clear your 3" tire.
I use one on my fat bike over 26 x 4.8" tires. I had to bend out the legs a bit for the extra-wide hub, but it works great.

None of the Tubus racks fit on the ECR, front or rear. You will need Old Man Mountain or Surly racks. Surly's 8-pack and 24-pack racks are made to works on the ECR.

I run Logo and Vega EVO racks front/rear my ECR with 29x3.0 tires on 45mm wide rims.
The Duo would also work up front presumably.
