Are there many 700cc folding bicycles on the market?

Many? Not compared to small wheel folders.

Bridgestone offers some in the Japanese home market. Then there's Changebike, Fubi, Koga, Montague.

There are demountable (take apart rather than folding) 700c wheel bikes. Ritchey, S&S.

Market survey? Design brief? Or have a particular use in mind?

Check first that you really need a folding bike with 700c wheels.

I got the Change Bike 650B recently and here is a link to the running review.
https://www.bikeforums.net/folding-b...bike-650b.html

A larger wheeled bike will trade-off fold size and handling when folded since its bigger/heavier, no going around that.

Montague are the other brand making a range of 700c folding bikes.

Most "700cc" bikes are motorcycles.
