I don't have any pix, but I've upgraded my Topstone's drivetrain:
-- GRX Shifters / front der / brake calipers
-- 38/24 MTB crank, with chain rings spaced in 2.5mm <-- compatible with GRX chain line
-- 11-40 11sp cassette
-- XT M8000 SGS rear der
-- Wolftooth Tanpan cable pull adapter
I've also put GP5000's on the stock 700c wheelset and got a bomb-proof 650b set (WTB i25 Tough Rims / Sapim 14/13G spokes / Hope RS4 hubs with 4-pawl stainless freehub body) custom built. These have Terreno Dry's on them. This isn't as overkill as it may seem...I'm 300 lbs, and it's what the wheel builder recommended.
This was on a heavily discounted 105 (less than new Sora), which meant I could do the upgrades a bit at a time due to component compatibility, but there's no reason you couldn't make all of these upgrades to a Sora bike, as well. I would have preferred the green to the black. But it meant I had more green $$$ for the upgrade process.

Like the poster above, I upgraded a 105 Topstone, but I think you could do all these upgrades on a Sora one as well:
- Hunt 4 Season Gravel Disc Wheels
- Panaracer Gravelking SK tires
- Shimano SLX SM-Rt70 brake rotors
- FSA K-Force Di2 seat post
- Tacx Ciro bottle holder
- Deda Elementi Zero 100 80mm stem
- Fabric Hex bartape
- Shimano EH 500 pedals
