Where should we go in August?
My wife and I (60+) want to spend a week on a self-guided, supported tour in August. I hate heat and she hates hills. We've been thinking Europe, so Ireland? Denmark? Looking for ideas and experiences. Thanks!

Look at Iron Donkey in Ireland. They offer self guided tours with luggage transfer in Ireland. You’ll have to ask about terrain.

I wouldn't make any non-refundable travel reservations for the time-being until it becomes clearer to what extent the corona virus will affect travel in upcoming months.

Agree about avoiding non-refundable situations until the coronavirus is better understood.
If you do go, I highly recommend the Loire a Velo in France. It's well marked, there's towns and villages all along the course, it's nearly flat. Scenery and chateaus are awesome! It's often bike paths and when it's not, you're on rural roads. Don't know about the heat though as last summer was ridiculously hot.
Safe travels.

If air travel is still iffy, and vous aimez francais, La Route Verte, au Canada.
Although, my only experience with it is via their guidebook.
Good luck
