When we ride rail trails or dirt, my wife still rides our son's 1990 vintage Specialized Stumpjumper. Back in the early 2000s she rode that thing on the 25 mile biking leg of an Iron Girl triathlon. I bought her a road bike after that but on dirt she still likes the safety of that big old Stumpjumper.

I have 3; Two MTBs and a beach cruiser.
I also have a 27” bike.
As long as I can still get tires, I see no reason to take them off the road or convert them to something else.

When the studded tires are worth more than the bike, and showing no signs of wearing out, you keep the bike. 
But amusingly, a nice thing about 26" is that your friends will give you tires and wheels for free, that are often in like-new condition. I've got a pair of high end MTB tires for the same bike.
I still ride a couple of 27'ers too.

I miss my old Trek 930. That thing took a beating for 14 years. Good thing I did know it was so wrong. I never would have enjoyed it.

Three - a 1995-ish Trek 8000, a beach cruiser of unknown make/model, and a Frankenbike created from a Nashbar MTB frame using parts salvaged from a 1992-ish Mongoose IROC that had a cracked headtube (including some superb Maxis rimmed wheels!). All are used on pavement only. I see no reason why I should get rid of any of them.

I guess I'm down to 3 bikes with 26" wheels if I include the mullet recumbent. Second the notion that 26" wheels are often given away, huge advantage.
From a tube perspective I sort of wish every bike I owned had the same size wheels. I have more tubes in my bike shed than the local Walmart. Have to make sure I grab the correct repair kit every time I take a bike out.
