FWIW, I received an Assos jersey as part of a birthday gift from my wife this year. Excellent overall quality but sadly not as breathable as my Castelli jerseys. I don't think I'm particularly sensitive to these things, and it's definitely noticeable. Still much more breathable than a t-shirt or compression gear.

It depends on what you will use the bike for. If you do not race there are plenty of durable reliable bikes for less than $200. And you can upgrade them if you know how. I upgraded the wheel brakes on my $130 Genesis bike with a disc brake because I liked the disc brake on the front so much. It took a bracket and two pieces of angle aluminum to mount the caliper, but ebay has calipers with enough adjustments to make it work as well as the factory front disc brake.

For me, the higher end jerseys tend to be a more technical fabric that flexes better, breathes better, compresses better, and if you have any sense of style in your bike and gear, they look better too.
Oh and (except for an unpleasant surprise from an expensive POC jersey) they also resist funky funk funkadope better too... as long as you hang them to air out before tossing in the dirty bin, you launder correctly, and you attend to your own hygiene.
Of course, I started out w/ a $20 yellow performance jersey, so never forget, life is a journey. Enjoy it, don't sweat the past, and you do you. Any cliches I missed? Feel free to chime in.
Oh yeah, and I just ordered this kit from my bud who has taken his kit design chops and started his business @ ostroy.com
