I'd have any steel frameset finished with glossy British racing green with black everything (well, except for the braking surfaces, of course...) like so ⬇️
On a modern alloy road bike, however, I'd go with one of them brighter colors - red or blue would be nice:
It's always teal that I'd choose for any MTB that I would take as my own...
Though I wouldn't mind a little more than a smidgen of florescent with that...
If it were a small-wheeled (20"-24") folding bike we're talking about, however, it would have to be something that resembles military drab:
... And about the same for any fat bike I'd want to call my own:
For a hybrid, I'd default to what I already have now - matte gray (which the OP expressly stated that they didn't care for - sorry OP) with white lettering:
If my leaner, fitter imaginary self were to go all out with a carbon roadie, I'd either default to a matte black finish in an SR-71 vein - preferably with red lettering - or just have a layer or two of lacquer over the bare carbon - because, if were to go all elitist and $*#t, why hide it behind a layer of paint and not flaunt it?

Stop-sign red and chrome. Lots of chrome; maybe more chrome than red. If I couldn't have that, then I'd want matte black like William Hurt's Porsche in The Big Chill.

It depends on the type of bike.
Race bike: Black with silver lettering or metallic deep navy blue with black lettering.
Touring bike: English green, tan or beige to blend in if stealth camping
Folding bike: one of the primary colors (red, blue or yellow) because they look comical
Titanium: bare metal all the way with braised lettering.
Tandem: whatever my wife wants— if I could only get her on a bike.

It depends on the bike, and also the maker. Some builders have signature colors and I feel like that's what you should use. A Look frame cries out for some version of their Mondrian scheme just as a Bianchi should be Celeste (and a Trek should never be Celeste). For that matter Co-Motion and Landshark frames should have garish paint jobs and not conservative colors because they are notorious for that.
Other than that, I find solid black or white a bit boring and like a good strong color. I also really like matte anodized frames for mountain bikes. My new used Pivot is a bright blue and the matte anodizing is very scratch resistant.

Coffee brown
I once had a metallic brown Raleigh road bike. Then at a garage sale I picked up a pair of perfect Raleigh school bus yellow fenders, and voilà!, such an ugly bike. I rode it with pride for years.
