Long Touring
My friend and I will try and ride from Kathmandu to Goa next March 2021. Has anyone done this before or know of a good blog which explains routes, traffic / pollution avoidance, stopping overnight places, personal security and all the hardships and challenges of an epic journey. I have used Bikemap web site/app for initial routes but youtube videos show some awful traffic and road conditions.

You can search RideWithGPS, Strava and other sites for routes and actual rides that others may have done and made public. Then you can see elevation profile and other things that might make some segments better than another route. And if someone publicly shared their actual ride data, you might can make some assumptions about your performance.
You may not find one published route going the full length, but you can definitely find some shorter routes going the right direction. I did. I was curious so I took a look at some on RWGPS that others had done.
If you are really lucky, some may have written a story about their experience and put it up on RWGPS. I'm sure Stava has similar.

You can try and PM TrekMogul here. He spends months at a time cycling South Asia.

You can check out the trip reports on crazyguyonabike.com
I find it a helpful place to learn about new regions.
