You'll have to add mounts to the frame and fork for disc brakes. There is a reason they went to though axles instead of QR's for wheels with disc brakes.

But I've done my share of things that others don't agree with too. Just be informed.

If you are wanting a nice leisurely riding bike for soft surfaces and gravel, then I'd just get a fat tire bike that will have the proper geometry for that comfortable leisurely ride.

This is what I ended up with...

Bike Frame - Trek 830 Antelope 22" - Dimpled the chain stays for more wheel clearance. Dropouts were already spaced to 135mm. Was not straight and I had to reset after dimpling.
Seatpost - Shimano Deore - came with the bike.
Seat post Quick Clamp - Amazon
Saddle -Ergon SR3 Road Bicycle Saddle from Ebay. I switched to this saddle because the rails are long and I needed to set the seat back more.
Fork - Switched to rigid steel forks from Ebay NOS threadless with Disc caliper mounts.
Crank Set - Sram NX 1X 32T.
Bottom Bracket - Sram GXP.
Pedals - Crankbrothers Stamp 1
Rear caliper adapter - Chaser Tech 145mm.
Front and Rear Brakes - Ebay - Shimano BR-M375 Mechanical Disc Brake Calipers.
Rotors - Avid HS1 rotor 160mm (calipers and rotors came in a complete kit from Ebay for $50).
Brake levers - Origin8 Mini Trigger Brake Lever from Amazon
Front & Rear Wheels - Chinese (I guess) from Amazon 27.5 in / 650b ATB Rim or Disc Brake Wheel Set Black. If I did it again I would build a set with better components. But these work fine.
Tubes - Continental
Tires - Continental 27.5 x 2.2" Cross King. Barely fit the rear.
Handlebar Stem - Ebay - Bontrager SSR threadless Handlebar Stem 105 10 degree.
Handlebar stem spacers - Carbon fiber from Amazon.
Handlebars - came with the bike. Aluminum. Too narrow.
Grips - Came with the bike.
Derailleur - Shimano 11 R7000 speed from Amazon
Derailleur Drop link - Wolf
Chain - KMC 11 speed with quick link - Amazon.
Rear cassette - 11-50T SunRace - Amazon.
Shifter - Shimano 11 speed trigger shifter - Amazon.

Still need to make some adjustments and trim the cables.

Weighs around 27# on 2 different scales.
