Cassette Advice Needed

I purchased an Ultegra 6800 groupset yesterday on CL for $250. The guy pulled it off of a new bike that he purchased. He kept the cassette and the cables though.
Thus, I need advise on the cassette. I am pretty sure that I can buy the 105 5800 and use that but I wanted to check before I did it. If weight is the only difference than I am ok with that.
Can I run the 5800 Cassette with the 6800?
I ride mostly in Florida, which cassette would your recommend? I'm thinking of 11-25. Perhaps 11-23.
Advice welcome.

5800 will work fine with 6800. 11-23 or 12-25 would be my choice.

Depending on what the chainrings are, a 25 is nice sometimes. If it's 52-36 you might want to consider the 11-25. If it's 50-34 you probably don't need more than a 23 in FL unless you plan to travel or end up at Sugar Loaf or whatever.

If there's no grade greater than 5%, I think it's a man-law that you have to ride a 53/39 with an 11-23.

I'd much rather have a 12-25 cassette than 11-25. I love having the 18t cog over an 11t one that I very rarely need.

i have a friend in the same boat as you, went from a 12-23 to an 11-25 rear cassette, and if i had a dollar every time i heard him complain that he doesn't have an 18 on the rear cassette anymore i could retire...

Where in FL? If you ever go to San Antonio/Clermont/Dade City area you will likely wish you had a 28T. So I'd say 11-28, since that's what I ride with my 52/36. It pretty much covers all the bases around here.

North Florida (Jacksonville) and SE Georgia, which is basically the same as Jacksonville. I always joke with my buddies that we do not even need shifters on the left side as I have not used mine in years. I am not even sure that they work. The only hills that I see in my riding is the overpasses. Once in a blue moon, I may ride elsewhere and see a bridge but that is REALLY rare.

Even in other places, a middle cog is going to get much more use than an 11.
You can always tuck & coast if you encounter a downhill steep enough to spin out the 12.

I just bought some Campy 13-26 cassettes. With a 53, I don't really need the 12, and rather have 1 more tooth for my climbs compared with 12-25 I was using. Lots of short steep hills here.
I can't imagine ever using my 39x25 in Florida.

I appreciate that. Unfortunately, I purchased a new Ultegra 12-25 from Ribble last Thurs. or Fri. It was only $42 and I had to get some other parts as well so it all worked out.
