I worked at 42nd and 2nd for 20 years. I don't think I ever once thought about going in the tunnel, no thanks. There are places on the West Side Greenway where I crank it out but I still don't get into my 50/13. And in Prospect Park at the bottom of the hill I usually turn it on in the 50/13 and keep at it along the flat section along Parkside Ave. It was 2 years ago when I was riding along there and I did that and blew away the race crowd. I'm in my 60s and grey, nobody expects it.
You're right on the money! I'm in NY and literally just last weekend ordered a NOS 12-25 ultra cassette(though not on ebay) from a small shop in CA because no local campy guys had it in stock, and a separate 16/17 cog for my existing one. The shop even called me after I placed my order and asked to confirm if I needed ultra or exa as they had a bunch of each and realized their online shop didn't specify. I'm sure the size dictated the series, but I still appreciated the call, that doesn't happen all that often.

This is incredibly outdated news. The 2015 spare parts catalog shows the same centaur 10 speed cassettes as the 2020 catalog. No chorus or record 10 cassettes. This should not be surprising, since 11 speed was available late in 2008 for the 2009 season. I switched my two bikes to 11 speed very early in 2009 and both of my bikes to 12 speed in July of last year. Absolutely no regrets.

Two bikes is plenty. The second can be handy if the first needs some sort of repair. I liked my Colnago C-RS so well that I couldn't pass up the opportunity to update my 16 year old LOOK KG-461 for only $500. Paid $750 with freight for the new frame and sold the old one for $250.

Or maybe, maybe, you could justify it by having different groupsets on them, so that you have an identical base platform for comparing the two. But, alas, they both have the same...

I have spare 10 speed Ergo shifters rebuilt/stored and ready for service. I just ordered six Campy 12-30 10 speed cassettes and chains. Ten speed stuff isn't hard to find.

Here’s the thing about having multiple bikes that all get ridden, none of them get ridden a lot. Even with just my commuter bike and road bike I found that lube lasted a really long time on the chain and the chain itself had lasted. My bike time was split pretty evenly. Since I stopped commuting the road bike gets a lot more us and needs more frequent attention.

10 speed Ultrashift levers ended with the 2010 model year, and the NOS supply dried up years ago. 11 speed levers matching replacement right 10 speed mechanisms were discontinued in 2014. I have some in my spare parts bin. I have spare NOS 2006 Record Titanium triple derailleurs too.
According to Campagnolo "The Campagnolo 10 speed Veloce 13-26 cassette is currently still available according to our B2B inventory in Italy. I am sure it will not be produced for many more years and I would not expect any other distributors to bring them in any longer."

The good thing is that the "big parts" like shifters and derailleurs last for ages with a little care and attention - my derailleurs are early 2000's and still perfect, and I recently had my shifters overhauled for the first time in 16 years - if I get another, say, 10 years out of them, I may go crazy and upgrade to 11- or 12 sp. In the meantime, 10sp wear items are still available. I've been using TA rings for years, and they're not going away - likewise with 10sp chains. The only thing I'm concerned about are cassettes, but they're still available and Veloce 10sp is relatively cheap. I usually buy the next cassette as soon as I install the last one, but this time I may stock up on 1, 2 or even 3 12/23s. I think they're going to start to get harder to find, but it'll just mean we'll have to hunt a little more and pay a little more, but it'll still be peanuts relative to the enjoyment they'll provide. A $100 Veloce cassette will sting a little when I'm pressing the "Buy it Now" button, but that'll be forgotten as soon as it's on the bike

I wasn't happy with the Miche I tried, thought it was kinda sloppy compared to the Chorus and Veloce cassettes I have. However, I've heard they work flawlessly for most people.
So they may be an option, you can even assemble it however you want with single cogs.
They are pretty heavy though.
Can I still rebuild my 10 speed shifters? The right is a little soft, even though it's not missing shifts.

Hmmm, maybe I should just look for another 13-26. I'm 65 and it could be the last cassette I'll need. For that matter I won't care if my chain and cassette get more worn out than optimal, it isn't like I'm going to lose a race because of it.

That's just the thing. Because I (we) expect the non-wear parts to pretty much last forever, with just a little bit of maintenance here and there, it's scary to think of a great group suddenly hampered by the lack of a cassette. And if they become slightly more expensive I can deal with that, so long as they are available in the marketplace.

In fairness, Shimano went 12 speed and 10t this year for their best 3 mountain group. Road should be soon.
I don't care for the action of a Shimano STI, but if keeping Campy becomes even more of a jewelery hobby (shiny and expensive but not really better) then I'd be happy to switch at that time. I've got quite a bit of time with my group though.
