Hey - It's your hands - If they say you can use it bare handed, who am I to say.
The stuff is formulated to break down oil and grease (some kind of detergent, I suppose), so I guess if you're not worried about it breaking down the oil in your skin, don't worry about gloves.

It's enzyme based, no detergent, and totally safe. The SDS is more benign than dish washing soap.

Look what a great job it did on this big block Ford intake manifold, and the guys gloves! Although that cleaner unit he has is $2800 and massive overkill for bikes.
