I can dream...
I wish I could ride every day, notwithstanding recovery time. I look at potential rides and routes from Strava and other sites, both gravel and tarmac and try to plan on the weekends. But life always seem to get in the way: errands, something comes up, spousal requirements, etc. Sigh.
So I mix running (5 miles) and short rides (15-20 miles) on the weekdays with longer rides on the weekends (50+ miles) which are limited by spousal time constraints. I would love to do multi-day rides going for 200+ miles. I can dream...

Get your husband/wife bike riding. Start simple and short and let it grow on him/her.

if you have the ability to use some vacation days, that might be your personal outlet to achieve the 200+ miler rides you wish to seek. Kinda what I do in the current times. All the places I'd traveled to prior to 2019 are now of no interest to me, so it leaves more riding time on the table. lose/win I suppose.

Plan for retirement and then you'll have more time to ride.

Buy her a bike that she would like (see the one I linked to above) and ride with her at her pace, maybe to a local coffee shop (outdoors and only if both of you are vaccinated), with the assumption that she would never go on a multi-hour ride with you. But at least she might develop an appreciation of why you enjoy cycling.

Yup, too bad she can't ride. Mine started riding with me 23 years ago and it has been sweet! New bikes no questions asked, new equipment as needed no questions asked. Suggested trips to the bike shops to browse and lots and lots of rides.
But yes, life gets in the way. Lost about 10 family members in the last year and a half (cancer, accidents, illness, Covid). Including my father and a son. But it does good to get out and ride when you can find the motivation!
