The big question now is how long it will take to actually lay new asphalt. The street just south of me that I use for my ride to work and other places was milled for months before it finally repaved.

Rolled by the Cadence/café yesterday but did not go in. They do have some new bikes, but the place still looks spartan/sterile. Not surprising since it literally opened last weekend or the weekend before. There is a railroad crossing to get from the trail to the street. It was blocked by two trains. That sort of thing will likely hurt walk-in business. Standing trains block the view of the place and require a detour to get there.

They have pistachios and honey, like a cross between buttery shredded wheat and baklava, right? Fanstastic with coffee, whatever they are.

Pretty much. Instead of honey, these guys use a simple syrup with a hint of rosewater.

Ah, yes, rosewater. The taste just jumped into my mind when I read that. Didn't know it was simple syrup, but I assume that's the thing.

That's the ticket. These are served up less syrupy, but they often give you a little plastic ramekin of extra syrup if you need that sugar boost.

This recipe has lemon zest simple syrup, but I swear Mr. Sweets has rosewater in their syrup.

At least you are not living in the land of chipseal. They have that stuff slathered all over Chester County, especially the Southern half.

You haven't ridden in the city lately. The streets are a mess. So bumpy. Although I did hear that they repaved the bike lane on Pine St . in Center City. That thing was un-rideable in many places.

I have never heard a jackhammer in Belize. But then I have never lived anywhere they would be used. Mostly, in the poorer Central American countries, everything is done by hand, with spud bars and picks. And muscles.

Tomorrow is our last day here, and we plan to walk upriver to the spot across from our old dugout landing. We are both looking forward to it.

The walk upriver will be on a farmer road, the road where all the farmers walk to their individual plots, turning off at whichever side trail fits their needs. We will not actually see the river until we arrive at our destination. There ought to be some good photo ops along the way though. It is early in the rainy season; by December this "road" will be ankle deep in mud with every step. Very easy to have one's boot sucked off their foot. One time I stepped into an everyday looking mud puddle and sunk in to my hip. Fun times.

The bean is covered in a gelatinous sweet/sour covering. Quite tasty. To process the chocolate, this blob is pulled out in it's entirety and thrown into a pile big enough to build up heat and ferment the kernel. This is somewhat of an exact science, because the ultimate flavor depends on the quality of fermentation as well as the seed stock.
Then it is washed, in the river here, and spread out on a concrete pad, a tarp, or on elevated screens to dry. When properly dried it can be stored until time to roast. Roasting wants a very slow fire for an hour or so.
Let it cool and crush it. This breaks up the husk so it can be winnowed out.
Finally the chocolate nibs are run through a hand grinder at a very fine setting. A strong man uses two hands to turn the crank.
It comes out like a stiff mud, which is formed into balls for storage or for sale. In these parts, chocolate is drunk as a lightly sweetened tea, made by throwing a ball into a pot of water and heating(not boiling) it until dissolved. Sweetener is added while hot and the result is drunk instead of coffee. Throughout the day.

the traditional syrup for all these types of “deserts” are made with 1 part water, 1 part granulated sugar and about a quarter of a lemon’s juice over low heat, stirring until the mix gets syrupy. The trick is to know when to pour the syrup. If the pastry part is too hot, it absorbs too much syrup and loses all its crunch, if it’s too cold, never gets enough syrup to retain some moistness in itself.

Difficult to to resist when you have a sweet tooth like mine (tough I like what’s called “tulumba” a little more than kadayif).

Some of the bike route for a local triathlon, coming up this weekend, just got stoned. The triathletes are not going to be happy.

I went through a Tri phase a few years ago. I forget how many I did, maybe about 6. Most were sprint and at least one Olympic.

Luckily, I got over it.
