Like the title says, sometimes it's worth a shot, sometimes it pays off sometimes it doesn't.

Here's my example of it not:

That's a crack, the hub also has dents in the race. Must have been one heck of a crash.

Know what you mean. Picked up a DA 7410 headset for a project in gorgeous condition, when I went to use it one of the cartridge bearings was totally trashed. And, of course, finding a replacement was difficult. Eventually did, but it took a lot of looking and more patience than should have been expended.

What is this "sometimes" you speak of?

Especially with rims. You end up buying it and it's all bent out of shape.

Sorry, I couldn't resist that one!

Dura-Ace 7400 hub? If the cup is cracked, punch it out and install another off of a donor. Takes the same tools, technique and skill as replacing a cart bearing.

Dura-Ace 7410 headset cartridge bearings gritty? Take them apart, flush and regrease. If they are indexed, discard the ball holders, then fill the cart bodies with a greater number of the same-size loose balls, and reassemble. Worst case: buy a cheap LX or 105 headset off of Fleabay, and scavenge for the 2 cart bearings.

It's an xt m730, I think removing the cups would require a blind hole puller and finding a donor would be prohibitively expensive
