Chain falling off Dahon Helios; bike shop useless

Hi, just joined a few minutes ago. TIA for any advice!
I was mostly using my 14-year-old Dahon Helios on flat streets with no issues, until recently, when it became my only form of exercise and I started riding some small urban hills. The chain started falling off with regularity, so I brought it in to my local shop. Two visits later, I had a new chain and case, among other things. Surprise, surprise, the brand new chain began popping off, so I brought it back in. OK, they told me there's absolutely nothing wrong mechanically, but it has a break-in period, and to shift gently (I've been biking for 50 years, including long distance Alps trips in my past, so I do know a bit about shifting gears, but whatever). So next time I made sure I was shifting extra carefully, one gear at a time, while barely pedaling. Popped off again, within minutes, on an incline and then shortly after, on a downhill... Hot, sweaty, angry, and covered in chain grease is not my favorite state, but I've been there far too often recently. I don't want to be a bike-shop "Karen," so I'm loathe to go back in there, but I don't know what to do! Am I missing something? I just want to ride my bike!

can be:

chainline missajustments or

dead old cassete + dead old crankset + new chain = chain pop off.

you probably need to change cassete and crankset as they are probably worn out and all will be fine.
everybody have something to learn, so learn that your chain will lasts maximum 5.000,00 km and need to be changed everytime it streches beyond 0.75., that will give you a safe windows to change your chain every 3.000,00 or 3.500,oo km ridden

Oh, I should have mentioned that they did replace the cassette with the chain (and I think the crankset too?) Plus it is supposedly "adusted."

or something like a 9 speed chain on a 7 speed chainset... chain could be to narrow for the chainset. What's the width of your chain

I would hope it last longer otherwise I'll have to change chain every 8 months

my friend, change chain each 8 months is a a very small mantnance of your equipment.
plus, it is a 5 min work.

a 8 speed hg 40 chain is something like us$8.00.

where the chain pops out? on crankset?
you can see if everthing is worn out by looking to crankset and seeing if its becoming sharp teeths
