1988 Mongoose Hilltopper
The seller is asking $160 for this. I'm shopping for a reasonably priced C&V ATB to use for bike camping. Rails to Trails weekend trips, and also lugging **** around the city, that sorta thing. Fat tires, canti brakes, loads of useful braze-ons... From what I've read this was a lower end offering, fairly heavy, but a bomb proof frame. Appears to be all original with newer tires. I'd like to do a drop bar conversion. Any opinions or advice are greatly appreciated!

Aim higher. Nothing wrong with it, but its really low end and price is high. Look for a bike with good parts. Good parts are typically attached to a better frame. Good parts = Deore XT, DX or LX. There are others too.
Vintage Mongoose MTBs can make good deals as the Mongoose name is garbage with most buyers since they hooked up with Walmart. I donated a vintage Mongoose MTB last week that was full Deore XT. This one is too low end, and the price is high. I also donated a 1992 Trek 930 last week, which is another fine choice.
Lately I have been picking up vintage MTBs after avoiding them for years. For myself, I am doing exactly what you are describing. My drop bar conversion Cimarron is my go to camping/vacation bike.

In your opinion, would it be worth it to pay $50 for a mystery bike just to strip the 3x7 Deore II drivetrain off it? It looks in decent shape, and I wonder if I could put it on my Schwinn Sports Tourer that's currently a single speed.

Deore II is excellent. Depending on condition, it would be well worth $50. Nice thumb shifters plus triple crank are worth that much or more. If it has Deore II pedals, those are worth $50.
