They turn yellow and nasty over time and I think they are harder to keep white more so than white bar tape itself.
I figure the brifters are already black no matter what, so may as well have black hoods too, especially since that's where your sweaty hands spend most of their time - one less thing to really clean. I've got white bar tape and I love it, but it's a chore to keep clean...don't want to also be cleaning hoods so much.
Personally I just don't think white hoods add anything to the bike like white tape and saddle do. To each their own though.

Is that what those are? Do they warn about extra stooping distance when wet? And are they common on stock bikes? I haven't bought a stock road bike since maybe the early 90s. Schwinn 754. It came with a sticker on the frame that read "Wet rims require extra stopping distance."

I love the entire B&W scheme. You’ve created a very beautiful bike.
The background wall also looks great. You should submit this picture to GCN for their Nice - Super Nice segment.
I’ve used white handlebar tape in the past, but they are a PITA to keep clean.
So now I use Cinelli Mike Giant tape, I like the design and it fits well with a B&W bike.

I actually never thought of a white seat, not sure why. Hitting ebay right now! White hoods no because I will not leave white tape on the bike when this is nasty. Just wanted to try it but fear the dirty white so will go to the black/white that was suggested.

Here's a better picture of the 2017
Roubaix SL4 Sport. Modifications from stock include the Sella Italia white saddle which came from my previous bike, the white tape and the white hoods. For those who dislike white hoods, they are a breeze to keep clean. I use Lysol All Purpose Cleaner (yellow spray bottle) about once a week.

If you want a pro tip on keeping the white bar tape clean, use Westley's (well, now Black Magic) Bleche White. It's available at any auto parts store, and it's made for white wall/white letter tires. When I bought my bike, as an auto detailer on the side, I decided to try any and every remedy/product/home made concoction to determine what was the absolute best (oxy, baking soda, vinegar, lemon juice, etc etc etc) and I finally determined that Bleche White straight out of the bottle as-is worked the best, hands down. I use a clean, wet terry cloth to gently clean off what obvious grime I can, followed by a dry, white terry cloth to dry it, then I soak another terry in Bleche White, soak it on the tape for a minute or two, and then gently scrub the tape. Then use the wet one to remove it, and the dry one to dry it and you'll keep it sparkling for a long time to come. Try not to get any uncoated aluminum wet with Bleche White, it can corrode.

Yeah, the three stickers look best. I reckon all that yellow actually looks pretty cool, but then my bike is covered in red bling that not many folks here dig.
But your seat looks pretty wrong - a bit of downward tilt goes well with a big drop to the bars, but you have a lot of tilt with little drop and it's slammed back on the rails, which can't be right unless your femurs are unusually long.
