The lower the pressure, the softer they felt. Of course, that seems obvious, but it's particularly the case for wide tires on narrow rims. I'm about 240 pounds, I ran them at about 30 psi front/50psi rear. I ended up taking them off because I bought a dedicated MTB, so I put 40mm hybrid tires back on it.
Be careful also with tread design. Tires with larger side knobs, especially when run at a lower pressure, can give you some.

I've wanted to put a north road style handlebar on something lately, but haven't wanted to invest the money. A late '90s GT Windstream cruiser frame came up on the local Facebook Marketplace for free this week, and I went and picked it up. I wanted it primarily for the stem and handlebar...and I put them on my '97 750. It's remarkable how fun this bike is to ride with this bar setup.
I did have to lengthen the front brake cable, but I was able to get away with the existing rear brake cable...but just barely, which explains the wonky routing. Otherwise, this bar fits and works great on this bike. The seat post is a Satori parallelogram seatpost...similar in nature to a Thudbuster but with a coil spring instead of what I guess is a solid elastomer on the TB. The ride is...sublime. The handling is great (it feels like I'm sitting on the back tire, so the bike feels super zippy).
The bar is a 610mm width bar, though I don't know any other details. It's not one, but it seems similar in nature and style to the Velo Orange Tourist Bar. It adds a fun old-school feel to this bike. I've been riding my mountain bike a lot lately (which has a pretty rider-forward position)...so it's fun to go in the opposite direction for a fun change.

I have a 750 running Nitto Albatross bars on a tall Nitto Technomic stem - see pic.
BUT I also recently built up a Trek 930 which is the similar era MTB cousin to the 750, also US made, also lugged True Temper tubing - as a 650b conversion using the Tektro CR 720 cantilevers and I slapped a Jones bar on it and it's a hoot.
Pic included.
So if you want to try one on a 750 I say go for it!
BUT I also recently built up a Trek 930 which is the similar era MTB cousin to the 750, also US made, also lugged True Temper tubing - as a 650b conversion using the Tektro CR 720 cantilevers and I slapped a Jones bar on it and it's a hoot.

So if you want to try one on a 750 I say go for it!

Interesting -- so the 720 cantilevers had enough adjustment to reach the 584mm wheels? I presume the 930 originally came with 559s. That's a 12.5mm difference in the rim brake track radius...but cool that the 720s had enough adjustment. I'm running the CR 520s on my 750. These Tektro cantilevers are darn good brakes (with better pads).

I will say the pads that came with my 520s (probably the same ones) were not great. I swapped those for a set of the Avid 20R pads that used to come with their Single Digit series brakes. I find these pads to be very good in nearly all conditions. I used them mostly because I had them. If I didn't, I probably would have bought the Kool-Stops like you did.

From a frame standpoint, what is the difference between the 900 series and the 700 series? Are they more heavily built?

I think the 900 series frames are designed for 559mm wheels, right (26"). The 700 series frames are designed for 622mm wheels (700c).

900 series were their high end mountain bikes, 700 were their hybrid series. So, wheelsize and better tubing on 900 series (OX II/III vs standard double butted).

Does anyone know definitively what headset size is used for a 1990 Trek Multitrack 750? I know it's a 1" threaded, but not sure if it's the 26.4mm variety (ISO?) or the 27mm variety (JIS?). Searched and searched but no luck.

I think it's very likely to be the 27.0mm size. The literature I have (from vintagetrek.com) from that era does not specify the headset. I think the only sure-fire way is to measure your existing one.
