From the link dedhed posted, it seems a lot of the 90's trek MTB's came with 7 speed specific freehubs that can't easily be upgraded.

Here's a dumb question: assuming the freehub can be removed from the rear hub, if I replace the freehub with a newer one (one that could fit an 8, 9, 10 etc cassette), wouldn't that mean the wheel (rim) is going to be pushed slightly off-center?
Not a dumb question at all. I used to think the same thing. All mtb cassettes are roughly the same width, the chain just gets narrower. The sprockets are closer together.
EDIT
I forgot to add that if your going to switch to disc brakes then you would need new hubs anyway.

In my opinion, if the frame is in good shape and safe , it fits you and you like it then fix it up. (If) it was a low end bike to start with part of that was because of the components that were on it. Unless you are worried about the frame being unsafe or you want something lighter I see no reason to not put that money into upgrades. You can always look for your perfect frame and switch all your high end components over to it. Again in my opinion if you spent $800 upgrading everything on your bike you will have a better bike with much better components then you would ever get on a complete bike for $800.
