I bought a whole, running perfectly, Diamondback mountain bike for the aluminum alloy rims and the nearly new tires for $15 at my local Goodwill. It would be worth a shot to scour FB marketplace and local CL ads for a cheap mid/upper level mtb to use for parts.

Sun Ringle Equalizer 21 rims are pretty light, but they're pretty skinny.

Same with Mavic 238.
