2-3 pairs of shoes. Let them dry properly and sometimes wash out with water.

I use baby powder both inside the socks and inside the shoes, applying before I ride. I also have a few pairs and can air out one pair in the sun and use a different pair.

You know, I've never had this problem with bike shoes, but some trail runners I wear without socks have to sleep outside.

I rinse mine mine out as well. Every few rides or rides that were particularly sweaty. I have a sho dryer that will dry them out overnight.
