My new to me K2 Mach 2 with questions

Recently I found this in Craigslist, couldn't pass it up at the price I got it for.
Did some minor adjustments and it rides real nice, I'm very happy with my purchase, my first road bike after a 3 year layoff.

Now here is where I could use a lesson... coming from mostly all road riding for years, my last road bike was an Allez, the K2 feels faster and also more steering sensitive than other entry level road bikes I've owned, this bike feels like it could turn on a dime.
I still can't let go of the handle bars as I used to with other bikes.

So with that said, what can give a bike a "faster" and more "twitchy" feel to it than another?
