Has anyone converted their C1 to have a disc in the back?

Sounds like a great idea . I haven’t , but I did add a rim brake to the front of both of my Cruiser 1’s .
I’ll be watching this to hopefully learn something.

I added a rim brake to the front of mine too. I used it primarily as a clunker MTB. But once the rear hub was completely trashed (~2 years) I never took it past that and parted with the frame. Now that those adapters are available I have a spare wheel and some brakes... too bad I won’t be able to try it out for a few months!

i also hate the drag (however slight) from coaster brakes.
