What's the name of this part? The cable housing stop that sits in the caliper arm. Is it just called a cable stop? There's a set of new gran compe brakes at the local bike coop but no appropriate cable stops to be found, and I'm finding it difficult to source online.

Cable adjuster, there are Campagnolo compatible assemblies that I think will work, the bore they drop in is a "D" shape

I'd say "barrel adjuster" or "adjuster barrel", but I'm not sure how universal that terminology is.
It seems to be used enough to pop up in a web search...

Barrel adjuster, in my book. (No, I didn't write a book, it's an expression )

If the brake has the D-shaped hole compatible with Campy (I bet it does), and if you don't want to pay Campy prices for a replacement, you can file or grind a flat on the back of any 6 mm threaded barrel adjuster. Just take the minimum amount of metal off until it slips through the hole.

If the "nut" and/or the barrel are aluminum, put some grease or anti-sieze on the threads. I see those lock up with corrosion pretty often. The Campy barrel is chrome-plated steel, and their nut is (I think) chrome-plated brass or bronze, which is an excellent way to go for long-term reliability. So go for Campy if you can afford it. Or other high-end barrels from Modolo, Suntour Superbe, Dura-Ace etc., which are also interchangeable with Campy, with high quality chrome-plated threads.

Like ISO and JIS, English, French, Swiss and Italian, its all about standards. The bike world had really good standards and what's more, lots of them. Why would brake caliper cable adjusts be any different?
Seriously - I'd bring the caliper to a coop with a good parts inventory and look through the boxes and try on the adjusts. (Check both the fit in the bake and the threads, Pick up the O-ring nut also if different, even it the O-ring is trashed.)

I won't lie.. I was expecting to see a after that sentence.
I wonder what it would cost to get "The Nice Thing About Standards is That There Are So Many of Them" needle-pointed onto a pillow?
edit: should be "the nice thing about standards is that there are so many to choose from".

(grateful that I only have one Whitworth bolt in my bike collection)

I find some aftermarket options on eBay, including:

https://www.ebay.com/itm/324120380490

when I use "brake cable adjuster" as the search
