I have Gatorskins on 2 of my bikes and Ultrasports on the third. The gators are hard and heavy and they roll like bricks, but they're nigh invulnerable. (my favorite commuter tires) The Ultrasports are MUCH nicer to actually ride on. If I were building a bike like this, that clearly won't see street use, I skip the Gators.

Oh no, I hope not. You put some bank down on fine Italian components like Duraace you should ball out with the rest of it.

Actually, my Surly has a Gatorskin in the front, and a Gator Hardshell in the back. There's not a noticeable difference between the Hardshell and the Gatorskin it replaced.

Are the grips of the De Rosa sewn on the wrong way? I can't imagine it being comfortable to have your hands resting on the stitches.

They are stitched correctly. Your hands (fingers) grip the fronts and outsides of the bars, not the insides. Think about it.

It'd also be a lot easier to stitch it up as shown.

Do you have a bike with drop bars ? Place you hands on the drops and see what happens. The palm of your hand will NOT be in contact with the stitches. The only contact will be where your thumb wraps around. This is similar to a leather wrapped steering wheel on a car. Also, those stitches are probably quite flush, such that it's not noticeable.

I was going to drop the issue, out of laziness, so thanks for providing pictures! This illustrates it pretty well. Palm definitely hits, or you're doing something wrong.
It wouldn't matter for a short track event, though, especially if one was wearing gloves. That's one explanation.
