I not only mix brands, but mix cycling clothing with that from other sports. I most often wear bibs with a pocket with a running shirt. In cooler weather I wear warm running shirts or even a favorite kayaking sweater. I simetimes wear backpacking windshirts or windbreakers.
I also have used a some of my bike clothing for trail running, xc skiing, snow shoeing, and even down hill skiing, and so on.

If you're addressing clothes with brand logos, then no because I'd be loathe to wear anything like that (unless the brands are paying me to be a rolling billboard).
Would wearing a cotton t-shirt with regular bicycling shorts while on a road-style bicycle be considered a fashion faux pas in the bicycling world?

On a cold day cotton can be dangerous. "Cotton kills" is the old hiker standard.
On a casual ride or hike on a nice day cotton is fine.

I always wear black shorts and whatever jersey is clean and appropriate for the weather. I'm hard to fit.

I'm not a fashionista so I wear different brands at the same time all the time. I just pick out what will work best for the conditions outside.

According to my PCP, I’m immune to 76 different strains of bacteria and 18 different types of fungi thanks to wearing dirty cycling clothes. I once rode 6 straight days without a shower or laundry facilities while on tour.Imagine the chafing everywhere.
I didn't, and then I did because I felt a compulsion to do so. I also tend to coordinate the colors on the jersey to a bike I own

I’m sure I rinsed out my riding clothes once or twice during that stretch. Pretty sure, anyway.
When I finally hit Missoula after around 70 war, humid miles, I decided to get a room. As I was standing at the desk, a woman came out of the back office and was visibly shocked by my appearance.
There was a young girl cleaning up outside the rooms. After I showered and shaved and walked out, she said “You look like a completely different person.”

Yeah I mix across a few brands. I have no choice if I’m wearing my Assos bibs as I don’t currently own any of their jerseys.

Mixing? Matching? Here's what I do:
Check my cycle clothing drawer and see what's there (what's been washed and put away).
Think about how far I'm going, and what bike I'm riding. Because some of my seats are more comfortable than others and require less help from the padding. And some of my bibs are better than others for long rides.
Look at the colors available, so I can choose based on my riding location. Because I have a few brightly colored jerseys that I prefer when riding in traffic.
Get dressed and head out the door. Then immediately turn around and change when I realize it's warmer than expected, so I don't need tights, or cooler than I thought, so I should wear long sleeves.
In other words, same way all the pros do it.

Took this photo at the '95 Giro. That's Claudio Chiappucci in the faux denim, in case you don't recognize him. They were staring their way up the Col d'Angel. A meter of snow and them an avalanche at the summit would prevent them from making it into France. During the second day of riding, while heading to the stage finish at the Bianchi factory, Pantani came spinning along in the opposite direction wearing the same kit. He was sitting out the Giro due to injury so he could be ready for the TdF.

On my roadie, I wear a number of different brand’s of shorts and jerseys. On my mtn bike, I wear old road shorts with gym shorts over, with a wicking t shirt. The only mtn bike specific stuff I wear is 5/10 Freerider shoes.
