well .... maybe if I become Mormon, I can get a bunch of wives, and we can all share bikes. Of course,I will have to find sister-wives that can fit on bikes set up for me.
(Not a slur on LDS ... I know you guys chucked polygamy for statehood like 170 years ago ... and all the Mormons i have met were really good people. But when it comes to acquiring bikes, there are no boundaries.)

Commuter/Utility
Upgrade from my Priority 8 to a Soma Wolverine build with Rohloff hub, disc brakes, SON dynohub. Just a better version of the Priority with it's Alfine and SP dynohub.
Randoneuring/Sport/Backup Commuter
I have two bikes trying to fill this slot now. I'll trade both in for a Soma Fog Cutter build. Hydraulic disc, 2x, 38mm tires, SON dynohub.
MTB/Bikepacking/Cyclocross
I'm not serious in this category; it's just a casual thing. Right now I have a Trek Roscoe in this slot, and the 1x hardtail format suits me perfectly. I'll stick to the family with a Trek Procaliber 9.7.
I can keep my '84 Celeste Bianchi as wall art, right?

<<<<My Schwinn Crosscut can and has done it all...currently set up to ride with the grandkids. I just had to have a Domane and a FS MTB...neither of which has made made faster or look more skillful.

Been thinking about doing just that, keeping the Paramount and Trek 400t cause they feel the best on the road. Would keep the Bianchi cause I just like looking at it, and it also rides quite nice.

I wish I could have three bikes. I tried that last summer and the wife made me ditch one. So, two seems to be my maximum.

I have nine bikes in the garage that belong to me and the rest of my family. But the three bikes I always use are
1) 1979 Sekini 10 speed for spring/summer/ and fall rides everywhere;
2) KHS 1000 fourseason fatbike for winter city riding in snow 4 inches and deeper;
3) Giant Acapulco mtn beater bike for winter transition when the snow isn't that deep but there's still ice.
This year was so mild I only road the fatbike just a few times.

modern steel frame gravel bike.
modern steel frame road bike.
80s steel frame road bike.
So I would get rid if my stem touring/commuter bike and use the gravel bike for loaded weekend trips. And I would get rid of my modern MTB since for how it's used, the gravel bike would work well enough.

I'm pretty close to this.
1984/5 Spectrum
My gravel is probably late 90's but it's built modern except for the rim brakes.
Tallerico is maybe 15-17 years old but its steel and Campy, so doesn't age.
I could see replacing the gravel with a brand new carbon everything racing type of thing. Overall though, it's fine.
I'd also like a capable 29+ hardtail. I actually don't know if I'd use it but I'd like one.

Three seems to be the right number for me. I've got six right now, but only three get regular use:
1) Go fast carbon racing bike
2) Go fast steel racing bike/commuter for nice days
3) Bad weather, disc brake commuter/cross bike
If I ever get back into mountain biking (or touring), I will have to do a complete rethink.

Three Is At Least A Reasonable Number...
I'd approach it in terms of function:
- Road-type utility/commuter bike: endurance geometry, disc brakes, wide tires, panniers, etc. (I have this)
- Off-road sport bike: full suspension cross-country carbon race 27.5" bike (I don't have this)
- Road-type performance bike: race geometry, carbon throughout, mid-to-deep aero rims (I have this)
So, it looks like I need to find another bike...

Seems like three is a good ‘enthusiast’ number, and like it’s been said; more by the role/ mission than a particular type:
1. Sport/Fitness/Fast bike
2. Utility/Commuter
3. Fun Bike
My stable:
1. Fast Bike: SoftRide Nor’wester - long-legged all-rounder road bike
2. MTB / Commuter: Cannondale FXXXX - old-school XC trail bike. Fast, light and tough
3. Townie / Pathbike: 1976 Bridgestone -C&V ten-speed, usually with flat bars, but I’ve got drops and a knock-off Brooks for tweed rides. Also pulls the tag-a-long.

My road bike and gravel bike do everything I want to do, don't really need a third (blasphemy I know!). Not to mention that technically, there is a lot of overlap between my two bikes. The Defy can handle 35mm tires, and the Revolt is great on the road. But that's part of the reason I like them, they're kind of each other's backups.
But if I added a third, it would probably be a TT bike. Would be fun, but I have a hard time justifying the expense for only a few races.

Only 3?
Cycling and bike stuff are my primary activity 8-9 months a year. I would be a lesser human with only 3.

Uggggghhhhhh --- only 3?
I could make do. I don't ride gravel
First would be my mountain bike -- a '15 YEti SB 95 -- can handle XC trails at my admittedly relaxed pace , swap the tires and it can handle some gravel stuff --- another tire swap and it can hit blue level DH trails with no issues -- a very versatile bike
The Tarmac can handle any road duties I wish to pursue
Last would be my track bike -- does anything I need done on the track --- could technically fit a front brake and different bars on it for fixed gear training, -- but I don't do any of that

My ideal collection would be:
1) Racing rig
2) Gravel bike
3) Lightweight climber
I'm 2/3's of the way there:
1) Cervelo R5 (what I consider to be a perfect bike)
2) Orbea Terra (very versatile and, surprisingly, fun)
3) What I'm missing and currently lusting over I am currently eyeing a Lightweight Urgestalt frame, though. So maybe my dreams will come true.

If I was forced down to three bikes which is silly I might consider these;
A custom titanium all road bike with All City style Super Professional Dropouts room for really wide tires and normal 12x142 spacing at the rear, plenty of mounts for bottle cages and rack and fender mounts. A carbon front fork with provisions for dynamo routing, front racks and 12x100 thru-axle. I would do a Di2 set up XTR rear derailleur with XTR shifter. 4 piston brakes and Cane Creek Sweetwings cranks with Hellbender BB. Front wheel would be SON dynamo laced to probably a White Industries rim or maybe Velocity with Sapim CX Ray spokes and at the rear I would probably go with a White Industries hub and Sapim CX Ray Spokes. A titanium stem, seatpost, and a ti version of the Koga Denham Bars with Ergon Bio Cork GC1 grips and a ti railed Brooks Cambium c17 carved saddle. I would have titanium rack on the rear and a titanium randoneurring rack at the front with probably a Cinq Plug5 plus and a nice bright front and rear light (Supernova or B&M most likely as those are two lights I know well but not 100% sure). I would probably also have a set of fixed gear and single speed wheels and a way to quick disconnect the Di2 to run it single speed.
A custom titanium mountain e-bike with a Bosch Gen4 cargo speed motor and dual 625wh batteries and Rohloff E14 set up. I would probably go with a Fox Factory fork or RockShox SID at the front. Also would want burlier rack at the rear and a frame mounted rack at the front (that wouldn't interfere with front suspension. I would probably stick with a similar cockpit setup as the previous bike cause why not.
The final bike would probably be the Phil Wood frame I currently own only if just to stare at it all day because it is so pretty. I would probably stick with the same Dura-Ace 7400 gruppo on it but might consider swapping cranks to White Industries (because 'Merica and Phil Wood doesn't make a road crank) and probably swap seatpost to a titanium 27.0 seatpost (as the current Thomson post had to be hand sanded down to fit). Ideally as well I would to get a matching anodized bar and stem similar to my normal road bars but in 26.0 (as the current set up of Nitto and Cinelli are off ano and the bar wasn't exactly what I wanted) I would also love to have a custom longer cage for my 7401 derailleur. So the same bike essentially but with a few upgrades or changes that I would want to make if I could without spending more money than I should on this bike.
Obviously though there is some missing stuff in the three:
A titanium fixed gear road frame with carbon fork. I would go with a Sugino 75 Direct Drive Crankset, CeramicSpeed BB and Super Zen Chainring with Izumi Super Toughness Chain and EAI Gold Medal cog and White Industries Freewheel on the other side. Cane Creek eeBrakes mated to SRAM S900 brake levers. I would do another ti seatpost and stem with ZIPP Service Course SL-70 Ergo Bars and Lizard Skins 3.2 DSP tape. Wheels would probably be All City New Sheriff SLs with upgrade CeramicSpeed bearings laced to Velocity A23 rims.
A Hetchins frame lugged to the nines with S bend stays and full Campagnolo 50th anniversary.
A steel touring bike probably a Co-Motion Americano probably built similarly to what I have currently in my Cascadia but want wider tire clearance and a fork better suited for dynamo. I would also swap to the Cinq5 Plug and get that custom switch from Specialized they had on the old AWOL. I probably would swap to 2x11 and use White Industries G30 cranks so I could get a nice sub compact crank.
I would also want a full suspension MTB with XTR DI2 12 speed and Rockshox Reverb AXS or Magura Vyron dropper. I would probably do FOX suspension set up with the DI2 compatible/Live Valve stuff. For wheel I would probably do Industry9 System wheels with some funky colored spoke pattern.
I think that should reasonably do most of what I need though a close to full MUSA BMX bike would be fun and I would love to build a really trick tall bike and I do really love my current titanium road bike with Di2 but gotta be reasonable here.

I do only have three bikes - my Litespeed, which is used maybe 99% of the time, my fixie, which alas hardly gets an outing these days, and my boat anchor commuter, which I pull out if I'm feeling energetic enough to go to the shops or into work (not often). I tried mountain biking, but I didn't really take to it - too much falling over, and I sold my MTB to my neighbor. However, I could see myself taking another swing at it, with maybe a rigid fork and a 1x drivetrain - minimalism being the order of the day. Maybe also try a lighter commuter than my 3-sp Nashbar. My morning commute is almost all uphill

Only three bikes? OK, here's my list:
1) an aluminium hardtail mtb. It'll go anywhere and do anything.
2) a steel road bike. It'll go far and do it comfortably.
3) a titanium road bike. A pure luxury.
I could happily get by with just the first two, I suppose. In the apocalypse (which is about to happen, by the way), I could get by with just the one mtb.
