Which 11-40 casette for my road bike
I have a 10-speed road bike with Shimano 105. I want to fit a 11-40 caasette for bikepacking etc. I understand this will have to be an MTB cassette, which I know nothing about.
Which cassette should I be looking for (similar to 105 in quality)?
I also understand that I may have to fit a longer deraileur - perhaps an old MTB one. What is my best option of this is necessary?

You will also need a new shifter to go with that derailer. 10speed road shifters are not compatible with mtn derailers

Except if its a tiagra 4700 shifter that is not compatible with older mtb rear DRs. 4700 is however compatible with a 10s GRX rear DR, meaning you can put a 11-36 on the back, and a 30-46 in the front if you get the matcing GRX front DR. Just mentioning it, in case some one else reads along.

10s Ultegra road shifters with 9s RD, and 11-36 cassette.
Incidentally, I tried a 11-42 cassette once, but that was a no-go even with an extra-long B-screw.
I don't know if 11-40 would work.

I have been running an 11-40 Sunrace cassette for the last 3000 miles with no problems and they are relatively inexpensive.

I've been running 105 with an 11 speed 11-40 for a year and one half. Runs great the way I have it set up.
All one needs is on a 105 11 speed is the available MTB Shimano cassette with the appropriate gearing and a device known as Wolf Tooth Tanpan. If one wants a better margin of safety and performance swap out 105 midsize RD, (midsize is the actual Shimano RD that is sometimes colloquially referred to as the long size.)
Now the bad news. Using Shimano cassettes there does not appear to be one for a 10 speed that has a 40t or bigger. A 36t appears to be the largest. The Tanpan works on 10 speeds though.

Shimano 11 speed MTB cassette supposedly has the same spline width as 10 speed MTB and road cassettes. Only the 11 speed road cassette is 1.85mm wider (at the spline). This means that when you use the 11 speed Shimano MTB cassette on a hub that was meant for 11 speed road, you have to add the 1.85mm shim.
So if your hub is only for 10 speed, you could possibly get a Shimano 11 speed MTB cassette, like the CS-M7000. I saw somewhere someone talking about mixing the 11 speed road 14-28 with the 11 speed MTB 11-40 or 11-42 to get 14-40 or 14-42.
