Importance of Stack vs other measurements

I'm 6'3 with a 34.25'' inseam. Currently ride a 58cm Allez with a 130mm stem. It feels fine but always look and feel a bit hunched over as opposed to stretched out with a flat back.

Looking at ordering a Canyon Aeroad but they tell me I'm stuck between a L and an XL and I can't decide. Comparing frame measurements it seems everything on the L Canyon is bigger than my 58cm Allez EXCEPT for the stack which is shorter.

Yep... XL

Not that familiar with Canyon in particular but you'd probably find your best fit on a 61 (or 63, depending on how it's measured) frame size.

Decide where you want your handlebar, figure out how much your chosen stem is below that and then how many spacers you would need to get between the bottom of the stem and the top of the Stack height. If that distance is an acceptable number of spacers, you're good.

I'm 5'7" (on a low gravity day) with a 30.75" inseam. Your inseam indicated that compared to myself, a major part of your heigth is in the upper body. With this in mind, I'd suggest, while not ignoring stack, to have a good look at the length of the top tube. You could do a partial check on this by installing a longer stem and see how that effects the crowded feeling. You might end up with a clearer idea of needed dimensions.
