I had to double check the date of this thread skinny tires and deep rims. I would do Velocity rims, they are of good quality, made in the US and well known. Though I would run wider tires it is 2022...

I prefer smaller tubes. It's easier to get them in the tire without popping them if you have tight beads and less chance of pinch flatting when you're riding. They expand more than enough.
