Chipotle is good. As you might expect we are surrounded by very good Mexican food. Probably 30% of our meals are some variant of Mexican utilizing grilled chicken or fish. There are a lot of healthier options - not all of it is cheese enchiladas and refried beans although the unhealthy options are very tasty. The killer is the pre-meal basket of chips. Usually have to tell the waiter no gracias on those.

Mexican is probably the only cuisine that I could be totally happy with eating only that for the rest of my life. I currently have a slow-cooker working its magic on a batch of chile verde for dinner tonight. You can have the waiter bring that extra basket of chips over to my table.

Yes! Taco Bell is never consumed under normal times.

For vegetarians, they had a bean burrito, a bean burrito plus (I don't remember exactly what's in it, but not the full seven layers), and a spicy potato burrito.

The Slayer Burrito was the best!

I have been looking at wheels, what with the Ritchey's gravelly freehub (and the scant probability of getting a new freehub body for a 25 year old wheel) and the fact that I've been riding the Canyon on my wheel-on trainer. Crikeys! Wheels are NOT cheap!

Dang. Nice work, WhyFi.

As a vegetarian I would certainly consider Taco Bell in a pinch. I would prefer chipotle. And if out in the boondocks with no Chipotle, would prefer a Veggie sub from Subway over Taco Bell tbh.

Same here. Fish tacos last night. We've been buying the uncooked tortillas from Costco. I could eat green chile every day.

Didn't Mrs. LAJ get a Taco? How's she liking it?

Thanks. I rode out to an area to scout it for a 5-hour solo century attempt and ended up logging 114 miles in 6 hours in doing so. Should have just pushed it a little more and been done with it.

We found a Mexican market close by and bought a ton of fun stuff. When it was all done, we had chorizo and green chile left. So logically, I made green chile with chorizo in the crock pot. Cooked for 18 hours and it was great. Strange thing to have in chile, but it worked.

We would be happy with a 50/50 Mexican/Cajun diet.

For years, I would make Gumbo on the Sunday after Thanksgiving, having made stock from the turkey carcass and using the remaining leftover meat, plus some andouille. Mrs. GeneJockey used to say it was the best part of Thanksgiving. In recent years, though, we haven't had any leftover meat. I think maybe I've been getting smaller turkeys.

We did. She got hers, and after driving it a few times myself, I figured now's the time. So pre covid price jump, I grabbed a 2015 Access Cab with 30K on it. Basically the same color as the intrepid Ranger. We're a Two Taco Family

Carbs are the budget killer. My kids love all the carbs, though, specially pastas and breads, and it's generally expected for there to be a starch or two on the table for dinner.

Five hour century, these will be needed.

I haven't seen these - do you recall the brand? Corn or flour?

One of my cycling friends is going to Vegan Cyclist's training camp. He said there is an extra opening. I would love to drop everything and go but too many obligations.
