There is a possibility, not likely but still a possibility, of a manufacturing defect somewhere. I raise that possibility because my bike when new had a similar sketchy feel and pulled to the left. After detailed investigation with carpenters level and string I found the front and back wheels were not plumb. The dropouts were not inserted correctly with the result that the axles were not horizontal. A bit of very careful work with a round file fixed the problem. This is not the case with your bike as it was fine before the wheel change. But don't assume new wheels from a known manufacturer are built perfectly.

I will PM my address to you. Ship me the offending wheels and tires. I will test them extensively, and return them (postage collect) with a full report. :D

I would have the tension checked just because it's the easiest of solutions. Maybe try a different tire just for the process of elimination.
Its spooking you because speed wobble is friken scary, and hitting the ground at 30 mph is not fun.

I think if you're getting a wobble you never had before and the only change is the wheels, maybe the wheels are flexing a bit.

There have been threads on wobbling and many times there is no apparent reason discovered. It seems that certain combinations of bike/wheel/rider sets up a frequency that causes a wobble.
I had a friend who had a Miele with a wicked death wobble and nothing he did would stop it so he got rid of the bike. I've never had a speed wobble on a bike. Lucky me.
