One of the most difficult jobs to do without a proper work stand is overhauling a headset on a fully built bike. I don't use a full size stand, so I should know. I did this just the other day on my '80 Bertoni. Usually when I'm overhauling a headset, it's just in a bare frame, a simple task on my workbench. But it's quite a bit to juggle when the crankset and rear wheel are already mounted. And unlike you, I didn't need to remove the pressed-in cups...
