Good luck with that. I had it back in the 80's. Mine was caused by drinking. Quit drinking and the pancreatitis went away and hasn't come back.

I can't think of a good reason not to ride the Katy. It is a very enjoyable 225 miles. No traffic, just peace and quiet and other bikers.
