If it were me I'd try some kool stop brake pads and new cables and housing first to see if the brakes sort out. Seems like what you need might be a some advice at a good shop or bike co-op or a buddy...

Try tightening the b-limit screw. It will help get the derailleur further away from the large cogs.. not sure, but I think that xt derailleur should be able to do 32.

I'm pretty sure caliper and canti have similar pull, and v brake is the outlier. So without a v-brake lever, you may be out of luck.

I set up a 2x7 bike for a buddy using Exage Action RD/FD and modern Altus trigger shifters and it all works great together. Yes the FD shifter is indexed but it works fine.

1983 Schwinn Super Sport. Upgraded the drivetrain to Shimano RX100 FD/RD. Really just brings the bike into the early 90s. Love that thing.
