I'm surprised that your bike came setup tubeless. Most manufacturers still use tubes, even when the wheelset and tires are both tubeless ready.

So your bike mechanic skills are lacking. it takes about 8-10 minutes to set-up a wheel tubeless, and probably less if everything was prepped to go.

Do you use an 18t ring gear in your old DT240s? The new 240EXP hubs come with a 36t ring gear, which likely caused the difference.

I got to play with it for a bit, and it works fairly well.

swapping to a Shimano cassette helped it shift quicker. SRAM 11 speed groupsets also benefit from this change.
