V-brakes are no problem at all. Here's my Surly with Deore V-brakes, 700x42c tires schwalbe tires and very wide fenders. The clearance with V-brakes is huge.

So that is what a Surly "blacktacular" bike looks like. Its the first photo I have seen and it is very, very sharp. Are you running 26" or 700c wheels? I cannot tell from the photo.

Using drop bars does not mean they have to be narrow. I'm sure you could get drop bars that have the same width as your moustache bars, though some may view it as kind of weird. I use 48 cm wide...
