It could very well work. I have 11sp GRX with 8sp 600, 10sp Deore 6k with 9sp sora shifters on 8sp derailleurs, and like 3 11sp XT M8k cranks on 10sp, off the top of my head.

Yes, you can run MTB calipers on your road levers. As mentioned above, BR-RS785 is the Ultegra post mount caliper, which is a rebranded XT.

I've run GRX shifters to 785 calipers using BH90 hoses.

FWIW, my experience says to match the derailleur with the shifter. Matching curvature is nice but not necessary. I currently have a 38/28 crank with a ultegra 6700 unit working fine with indexing....
