My guess is a track bike won't last all that long doing the types of things you want to do. The solution is to sell the bike and buy one built to do what you want to do with it.

I ride Gatorskins on dry dirt crushed stone trails with no problem. Lowering the air pressure a bit might help as well....

Pinch flats are an inflation issue. Gatorskins are good. I run both Gatorskins and GP5000S. The GPs are definitely a nicer ride, but Gatorskins give better peace of mind.
