On the MTB side I've tried Magura, Shimano, Avid, Sram and Shigura (shimano/magura mix).

While the shigura takes the cake maguras are a close second, shimano comes after that and waaaaay behind...

I have ultegra dual pivots with compressionless housings and kool stop pads. They're, fine... Not really on the same planet as GRX.

Used to be relatively common where I live. But nowadays most people using disc brakes tend to use hydraulics.

I didn't have those issues when I lived up north where I got really bad winter...

Corroded cables are just a matter of time and conditions. In harsher conditions and daily riding cables corrode more easily. Or get grimy.

You should probably try some metallic pads. Some organic pads do wear pretty quickly. However metallic pads seem to last forever.

My cables simply do not survive multiple years. Perhaps it's the road salt or whatever but after two years they start getting sticky and sucky.

Anyways I'd imagine most hydraulic brakes these...

Modern hydraulics (shimano) are easier to maintain than cables. At least if you follow any reasonable maintenance regimen. You need to swap brake cables and housings every two years or so. Hoses last...
