I've got the same wheelset on my Look 585. If you don't already have tubeless tires on them, I recommend you try some when you replace the current ones. They make it even smoother. :)

I've got a 60cm '87 and wear size 46 shoes and don't have that problem. The bike is nicely responsive, doesn't feel any more twitchy than my modern bikes...maybe a bit less so.
