Bikes from the 1980s and earlier will need their rear dropouts cold-set to accomodate modern axle widths, and if you don't want to do that it can be tough finding hubs and freewheels...

I use KMC 11-speed chains on my SRAM eTap-equipped bike with no noise issues whatsoever. Same with my Campy Record and Shimano Ultegra & 105 bikes. Those chains just work.
