You might look into Bicycle Adventure Club.
https://www.bicycleadventureclub.org/html/ They're a non-profit club with tours run by the (trained) members. Their prices are reasonable and they run domestic and foreign tours with a range of daily distances and climbing. They have a detailed grading system for the tours.
